  • Hayet Albi began as a small wholesale bakery founded by a passionate Lebanese cook. The name “Hayet Albi,” meaning “Life of my heart” in Arabic, is a term of endearment often used by his mother and serves as a tribute to her.

  • While heavily inspired by Levantine cuisine, we don't consider ourselves a strictly traditional bakery as you might find in the streets of Beirut, nor do we adhere to Western traditions.

    Our head of pastry combines both contemporary and classic techniques and flavors to create innovative and elevated versions of beloved classics.

    We draw inspiration from Palestinian, Lebanese, Syrian, and Jordanian cuisines, as well as from other regions in Southwest Asia and North Africa.

  • You can find our pastries in Redlands at Slow Bloom Coffee Cooperative (420 W Colton Ave) or at our soon to be brick-and-mortar location in Riverside (3796 Tenth St), where we will share a space with Slow Bloom.

  • Being part of a worker-owned cooperative means every employee is also an owner of the company. We make decisions democratically as a group, ensuring that every member has a say in the direction and operations of the co-op. In addition to wages and tips, we also disburse excess profit among the co-op members via profit sharing to ensure every member can earn a livable wage.
